Chicken ParmStuffed Peppers

Chicken Parm Stuffed Peppers are a healthier twist on the classic Italian dish, featuring juicy chicken, marinara sauce, and plenty of melted mozzarella inside sweet bell peppers. Perfect for an easy weeknight dinner or meal prep!
Ingredients
- 4 large bell peppers (any color), tops cut off and seeds removed
- 1 lb ground chicken (or cooked shredded chicken)
- 1 cup marinara sauce
- 1/2 cup breadcrumbs (or gluten-free breadcrumbs)
- 1 cup shredded mozzarella cheese, divided
- 1/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- Fresh basil or parsley, chopped, for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare the Filling: In a large skillet over medium heat, add the ground chicken, seasoning with salt, pepper, Italian seasoning, and garlic powder. Cook until fully browned and crumbled. If using shredded chicken, skip this step.
- Mix the Filling: In a mixing bowl, combine the cooked chicken, marinara sauce, breadcrumbs, 1/2 cup of mozzarella cheese, and Parmesan cheese. Stir until everything is well combined.
- Stuff the Peppers: Spoon the chicken mixture evenly into each bell pepper, filling them to the top. Place the stuffed peppers in a baking dish.
- Bake: Cover the dish with foil and bake for 25 minutes. Remove the foil, sprinkle the remaining mozzarella cheese on top of each pepper, and bake uncovered for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Serve: Garnish with fresh basil or parsley if desired. Serve hot and enjoy!
