Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts, cubed
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1 cup bell peppers, diced (any color)
  • 1/2 cup zucchini, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup low-fat Greek yogurt or light sour cream
  • 1/2 cup shredded cheddar cheese (optional for topping)
  • 1/2 cup low-sodium chicken broth
  • 2 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C).
  2. Prepare Ingredients: In a large mixing bowl, combine the cubed chicken, broccoli, carrots, bell peppers, zucchini, and cherry tomatoes.
  3. Mix the Sauce: In a separate bowl, whisk together the Greek yogurt (or sour cream), chicken broth, garlic, Italian seasoning, paprika, salt, and pepper until smooth.
  4. Combine: Pour the sauce over the chicken and vegetables and toss until everything is evenly coated.
  5. Assemble in Casserole Dish: Spread the mixture into a greased baking dish in an even layer.
  6. Add Cheese (Optional): Sprinkle shredded cheese on top if desired.
