Healthy Chicken Casserole
This Healthy Chicken Casserole is a delicious, balanced meal that’s loaded with lean protein, fresh vegetables, and a creamy sauce without the extra calories. Perfect for meal prep or a wholesome family dinner!
Ingredients
- 1 lb (450g) boneless, skinless chicken breasts, cubed
- 1 cup broccoli florets
- 1 cup carrots, sliced
- 1 cup bell peppers, diced (any color)
- 1/2 cup zucchini, sliced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup low-fat Greek yogurt or light sour cream
- 1/2 cup shredded cheddar cheese (optional for topping)
- 1/2 cup low-sodium chicken broth
- 2 cloves garlic, minced
- 1 tsp dried Italian seasoning
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1 tbsp olive oil
Instructions
- Preheat Oven: Set your oven to 375°F (190°C).
- Prepare Ingredients: In a large mixing bowl, combine the cubed chicken, broccoli, carrots, bell peppers, zucchini, and cherry tomatoes.
- Mix the Sauce: In a separate bowl, whisk together the Greek yogurt (or sour cream), chicken broth, garlic, Italian seasoning, paprika, salt, and pepper until smooth.
- Combine: Pour the sauce over the chicken and vegetables and toss until everything is evenly coated.
- Assemble in Casserole Dish: Spread the mixture into a greased baking dish in an even layer.
- Add Cheese (Optional): Sprinkle shredded cheese on top if desired.
- Bake: Cover with foil and bake for 25 minutes. Then, remove the foil and bake an additional 15-20 minutes, or until the chicken is cooked through and vegetables are tender.
