Ingredients (Serves 4):
- 1 lb white fish fillets (e.g., cod or snapper)
- 1/2 lb shrimp, peeled and deveined
- 1 onion, sliced
- 1 bell pepper, sliced
- 2 tomatoes, chopped
- 3 garlic cloves, minced
- 1 tbsp palm oil (or coconut oil)
- 1 can coconut milk
- 1/4 cup cilantro, chopped
- Lime juice, salt, and pepper to taste
Instructions:
- Season fish and shrimp with lime juice, salt, and pepper.
- Heat palm oil in a large pot and sauté onions, garlic, and bell peppers until soft.
- Add tomatoes and cook for 5 minutes.
