A flavorful Spanish rice dish packed with seafood and aromatic spices.

Ingredients (Serves 6):

  • 1 1/2 cups arborio rice
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1/2 tsp saffron threads
  • 1/2 lb mussels, cleaned
  • 1/2 lb shrimp, peeled
  • 1/2 lb squid rings
  • 4 cups chicken broth

Instructions:

  1. Heat olive oil in a large skillet, sauté onion and garlic until soft.
  2. Stir in rice, paprika, and saffron, coating the rice in oil.
  3. Add broth and cook uncovered for 15 minutes.
  4. Add mussels, shrimp, and squid on top. Cover and cook for 5-7 minutes until seafood is cooked.
