Seafood Paella

A flavorful Spanish rice dish packed with seafood and aromatic spices.
Ingredients (Serves 6):
- 1 1/2 cups arborio rice
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp smoked paprika
- 1/2 tsp saffron threads
- 1/2 lb mussels, cleaned
- 1/2 lb shrimp, peeled
- 1/2 lb squid rings
- 4 cups chicken broth
Instructions:
- Heat olive oil in a large skillet, sauté onion and garlic until soft.
- Stir in rice, paprika, and saffron, coating the rice in oil.
- Add broth and cook uncovered for 15 minutes.
- Add mussels, shrimp, and squid on top. Cover and cook for 5-7 minutes until seafood is cooked.
