Veggie Scramble Wrap

A protein-packed breakfast wrap filled with scrambled eggs and veggies.

Ingredients (Serves 1):

  • 2 eggs, beaten
  • 1/4 cup spinach
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded cheese
  • 1 whole wheat tortilla
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat oil in a pan and sauté spinach and tomatoes until soft.
  2. Pour beaten eggs into the pan and scramble with the veggies.
  3. Once cooked, place the mixture on a tortilla, add cheese, and wrap it up.
