Korean Kimchi Jjigae (Spicy Kimchi Stew)
A warming stew made with aged kimchi, tofu, and optional pork belly.
Ingredients (Serves 4):
- 1 1/2 cups aged kimchi
- 1/2 lb pork belly (optional)
- 1 block firm tofu, cubed
- 2 cups vegetable or chicken broth
- 2 tbsp gochugaru (Korean chili flakes)
- 1 tbsp soy sauce
- 2 scallions, chopped
Instructions:
- Sauté kimchi and pork belly (if using) for 5 minutes.
- Add broth, gochugaru, and soy sauce. Simmer for 15 minutes.
- Add tofu and scallions; simmer for another 5 minutes.
