Korean Kimchi Jjigae (Spicy Kimchi Stew)

Seafood Based Dish in Wok

A warming stew made with aged kimchi, tofu, and optional pork belly.

Ingredients (Serves 4):

  • 1 1/2 cups aged kimchi
  • 1/2 lb pork belly (optional)
  • 1 block firm tofu, cubed
  • 2 cups vegetable or chicken broth
  • 2 tbsp gochugaru (Korean chili flakes)
  • 1 tbsp soy sauce
  • 2 scallions, chopped

Instructions:

  1. Sauté kimchi and pork belly (if using) for 5 minutes.
  2. Add broth, gochugaru, and soy sauce. Simmer for 15 minutes.
  3. Add tofu and scallions; simmer for another 5 minutes.
