Blueberry Cheesecake

Creamy cheesecake meets the fresh flavors of lemon and blueberry in these delicious bars.
Ingredients (Makes 12 bars):
- Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup melted butter
- Filling:
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 1 cup fresh or frozen blueberries
Instructions:
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
- Mix graham cracker crumbs, sugar, and melted butter, and press into the pan to form the crust. Bake for 8 minutes.
- Beat cream cheese and sugar until smooth. Add eggs, lemon zest, and juice, mixing until combined.
- Fold in blueberries and pour the mixture over the crust.
- Bake for 25-30 minutes until set. Let cool before slicing into bars.
