Cake With Raspberry Toppings

Creamy cheesecake meets the fresh flavors of lemon and blueberry in these delicious bars.

Ingredients (Makes 12 bars):

  • Crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup sugar
    • 1/2 cup melted butter
  • Filling:
    • 16 oz cream cheese, softened
    • 1/2 cup sugar
    • 2 eggs
    • 1 tbsp lemon zest
    • 2 tbsp lemon juice
    • 1 cup fresh or frozen blueberries

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. Mix graham cracker crumbs, sugar, and melted butter, and press into the pan to form the crust. Bake for 8 minutes.
  3. Beat cream cheese and sugar until smooth. Add eggs, lemon zest, and juice, mixing until combined.
  4. Fold in blueberries and pour the mixture over the crust.
  5. Bake for 25-30 minutes until set. Let cool before slicing into bars.
