Watermelon & Feta Salad with Grilled Chicken
Ingredients (Serves 2):
- 2 grilled chicken breasts, sliced
- 4 cups watermelon, cubed
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onions, thinly sliced
- 1/4 cup mint leaves
- 2 tbsp balsamic glaze
- Salt and pepper to taste
Instructions:
- Season the chicken with salt and pepper, grill until cooked through, and slice.
- In a bowl, toss watermelon, feta, onions, and mint leaves.
- Top with grilled chicken and drizzle with balsamic glaze.
