Watermelon & Feta Salad with Grilled Chicken

Ingredients (Serves 2):

  • 2 grilled chicken breasts, sliced
  • 4 cups watermelon, cubed
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onions, thinly sliced
  • 1/4 cup mint leaves
  • 2 tbsp balsamic glaze
  • Salt and pepper to taste

Instructions:

  1. Season the chicken with salt and pepper, grill until cooked through, and slice.
  2. In a bowl, toss watermelon, feta, onions, and mint leaves.
  3. Top with grilled chicken and drizzle with balsamic glaze.
