Red Velvet Lava Cakes

Ingredients (Makes 4 Cakes):

  • ½ cup unsalted butter
  • 4 oz semi-sweet chocolate (chopped)
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 egg yolks
  • ½ cup all-purpose flour
  • 1 tbsp cocoa powder
  • 1 tsp red food coloring
  • ½ tsp vanilla extract
  • ¼ tsp salt

Instructions:
Preheat oven to 425°F (218°C). Grease and flour 4 ramekins.
Melt butter & chocolate together until smooth. Let it cool slightly.
Whisk eggs, yolks, and sugar until pale and fluffy.
Add melted chocolate, vanilla, and food coloring to the egg mixture.
Fold in flour, cocoa powder, and salt until combined.
Divide batter into ramekins and bake for 12-14 minutes until edges are set but centers are gooey.
Let cool for 1 minute, then invert onto plates.
Dust with powdered sugar and serve with vanilla ice cream!
