Spring Vegetable Frittata

“Brunch just got a spring makeover 🌿✨ Try this fluffy, veggie-loaded frittata for an easy Easter breakfast that looks just as beautiful as it tastes.”

Ingredients:

  • 6 large eggs
  • ¼ cup milk
  • ½ cup asparagus (chopped)
  • ½ cup cherry tomatoes (halved)
  • ¼ cup red onion (thinly sliced)
  • ¼ cup feta cheese
  • Salt, pepper, olive oil

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Sauté onions and asparagus in olive oil until tender.
  3. Beat eggs with milk, season with salt and pepper.
  4. Pour into skillet, add tomatoes and feta.
  5. Bake for 12–15 mins until set and golden.
