Tuscan Butter Roast Chicken

This Tuscan Butter Roast Chicken is a flavorful, creamy dish that’s bound to impress. The savory Tuscan sauce made with sun-dried tomatoes, garlic, and Parmesan adds depth and richness to the tender roast chicken. Serve with crusty bread or over pasta to soak up every bit of the delicious sauce!


Ingredients

  • 1 whole chicken (about 4-5 lbs), giblets removed
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

For the Tuscan Sauce:

  • 1/2 cup sun-dried tomatoes (packed in oil), drained and chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp red pepper flakes (optional, for a bit of heat)
  • Salt and pepper, to taste
  • Fresh basil or parsley, chopped, for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken: Pat the chicken dry with paper towels. Rub olive oil, butter, minced garlic, Italian seasoning, salt, and pepper all over the chicken, including under the skin if possible for extra flavor.
  3. Roast the Chicken: Place the chicken in a roasting pan, breast side up. Roast for about 1 hour and 15 minutes, or until the internal temperature reads 165°F (74°C) in the thickest part of the chicken. Baste the chicken with its juices halfway through cooking.
  4. Prepare the Tuscan Sauce: In a large skillet, heat a bit of oil (from the sun-dried tomatoes jar) over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Stir in the sun-dried tomatoes and cook for another 1-2 minutes.
  5. Make it Creamy: Pour in the heavy cream and stir. Let it simmer for 3-4 minutes until it slightly thickens, then add the chopped spinach, Parmesan, red pepper flakes (if using), salt, and pepper. Cook until the spinach wilts and the sauce is creamy and smooth.
  6. Combine and Serve: Remove the chicken from the oven and let it rest for a few minutes. Pour the Tuscan sauce over the chicken, or serve it on the side as a dipping sauce. Garnish with fresh basil or parsley if desired.
  7. Serve: Slice and serve the chicken with the sauce, alongside pasta, rice, or crusty bread.
